At minimum 4 lbs, the boneless paleta iberica de bellota is a low-cost way to try acorn-fed jamon on the menu. Cured for 36 months. Fits on a small slicer. Slice chilled, serve at room temp. Vacuum-packed. Good for three months (refrigerated) before opening. Once opened it will begin to dry out slowly- keep it in a sealed container, better still, cut it into parts and wrap in film or vacuum-pack what you won’t be using that week.
